Paleo Cinnamon Rolls

Description

A recipe for soft, sweet cinnamon rolls made with grain-free ingredients suitable for a Paleo diet.


Ingredients

  • 1 cup almond flour
  • 1/2 cup tapioca starch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 large egg
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • For the filling: 1/2 cup coconut sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup coconut oil, softened
  • For the glaze: 1/2 cup powdered coconut sugar
  • 2 tablespoons almond milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking pan.
  2. In a medium bowl, whisk together the almond flour, tapioca starch, baking soda, and salt.
  3. In a separate bowl, mix the melted coconut oil, maple syrup, egg, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until a soft dough forms.
  5. On a piece of parchment paper dusted lightly with almond flour, roll the dough into a rectangle approximately 10×12 inches.
  6. In a small bowl, mix the coconut sugar and cinnamon for the filling.
  7. Spread the softened coconut oil evenly over the dough rectangle.
  8. Sprinkle the cinnamon sugar mixture over the oiled dough.
  9. Starting from the long edge, tightly roll the dough into a log.
  10. Slice the log into 8 equal rolls and place them cut-side up in the prepared baking pan.
  11. Bake for 20 to 25 minutes, or until lightly golden brown.
  12. While the rolls cool slightly, prepare the glaze by whisking together the powdered coconut sugar, almond milk, and vanilla extract until smooth.
  13. Drizzle the glaze over the warm rolls before serving.

Notes

  • You can use ghee instead of coconut oil if you tolerate dairy fat.
  • For a thicker glaze, use less almond milk.
