A large, soft chocolate chip cookie baked in a skillet, suitable for a paleo diet.
Ingredients

- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup paleo chocolate chips
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 6-inch cast iron skillet.
- In a medium bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
- In a separate bowl, mix the melted coconut oil, maple syrup, egg, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Fold in the paleo chocolate chips.
- Spread the dough evenly into the prepared skillet.
- Bake for 18 to 22 minutes, or until the edges are set and the center looks slightly underdone.
- Let the cookie cool in the skillet for at least 15 minutes before slicing and serving.
Notes
- You can add a sprinkle of flaky sea salt on top before baking for extra flavor.
- Serve warm directly from the skillet with a spoon.
