Ingredients

  • 1 cup rolled oats
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, rolled oats, sugar, baking powder, and salt.
  3. In a separate medium bowl, mix the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the muffins from the tin and let them cool on a wire rack.

Notes

  • You can substitute whole wheat flour for half of the all-purpose flour for a denser texture.
  • For a sweeter muffin, add 1/4 cup of brown sugar to the dry ingredients.
