A simple recipe for a peach crisp with a slightly different topping.

- 6 medium ripe peaches, peeled and sliced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup packed brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 cup cold unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
- In a medium bowl, toss the sliced peaches with the granulated sugar, cornstarch, and lemon juice. Spread the peach mixture evenly in the prepared baking dish.
- In a separate bowl, combine the flour, rolled oats, brown sugar, and cinnamon.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the peaches.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool for at least 15 minutes before serving.
Notes
- Serve warm with vanilla ice cream or whipped cream for a classic dessert.
- You can substitute nectarines or plums for the peaches if desired.
