Simple, quick bars made with a peanut butter base and topped with a chocolate layer, requiring no oven time.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup creamy peanut butter (for topping)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press this mixture firmly into the bottom of the prepared pan.
  3. In a separate bowl, mix 1 cup peanut butter, powdered sugar, and salt until smooth. Spread this peanut butter mixture evenly over the crust layer.
  4. In a microwave-safe bowl, combine chocolate chips and the remaining 1/4 cup peanut butter. Microwave in 30-second intervals, stirring between each, until completely smooth.
  5. Pour the melted chocolate mixture over the peanut butter layer and spread evenly.
  6. Refrigerate for at least 2 hours, or until firm. Lift the bars out using the parchment paper overhang and cut into squares before serving.

Notes

  • For cleaner cutting, chill the bars for an extra 30 minutes before slicing.
