Simple, no-bake energy balls made with chocolate and coconut.
Ingredients

- 1 cup rolled oats
- 1/2 cup protein powder (chocolate or vanilla)
- 1/2 cup unsweetened shredded coconut
- 1/4 cup cocoa powder
- 1/4 cup maple syrup or honey
- 1/4 cup nut butter (peanut or almond)
- 2 tablespoons chia seeds
- 2 tablespoons water or milk (as needed)
Instructions
- Combine oats, protein powder, shredded coconut, and cocoa powder in a medium bowl. Mix well.
- Add maple syrup and nut butter to the dry ingredients. Mix until a thick dough forms.
- If the mixture is too dry, add water or milk one teaspoon at a time until the mixture holds together when pressed.
- Stir in the chia seeds.
- Roll the mixture into small, bite-sized balls (about 1 inch in diameter).
- Place the balls on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to one week.
- You can roll the finished balls in extra shredded coconut or cocoa powder for coating.
