Mango Gazpacho

Description

A cold, refreshing soup made with fresh mango and vegetables.


Ingredients

  • 2 ripe mangoes, peeled and cubed
  • 1 red bell pepper, seeded and roughly chopped
  • 1/2 cucumber, peeled and roughly chopped
  • 1/4 red onion, roughly chopped
  • 1 jalapeño, seeded (optional)
  • 2 tablespoons lime juice
  • 1/4 cup water (or more, for desired consistency)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the cubed mangoes, red bell pepper, cucumber, red onion, and jalapeño (if using) into a blender.
  2. Add the lime juice, water, olive oil, salt, and pepper to the blender.
  3. Blend the mixture until it is completely smooth. Add more water if the soup is too thick.
  4. Taste the gazpacho and adjust salt or lime juice as needed.
  5. Pour the gazpacho into an airtight container.
  6. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • Garnish individual servings with a drizzle of olive oil or finely diced cucumber.
  • For a spicier soup, leave some seeds in the jalapeño.
