Ingredients

- 1/2 cup olive oil
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon poppy seeds
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Combine the lemon juice, olive oil, maple syrup, Dijon mustard, poppy seeds, salt, and pepper in a small bowl.
- Whisk the ingredients together until well combined and emulsified.
- Alternatively, place all ingredients in a jar with a tight-fitting lid and shake vigorously until mixed.
- Taste and adjust seasoning if necessary.
- Refrigerate until ready to use.
Notes
- This dressing thickens when chilled; let it sit at room temperature for 10 minutes before serving if needed.
- You can substitute agave nectar for maple syrup if desired.
