A simple recipe for a moist lemon cake topped with sweet coconut frosting.

- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 cups powdered sugar (for frosting)
- 1/2 cup unsalted butter, softened (for frosting)
- 1/4 cup milk or cream (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- 1 cup shredded sweetened coconut (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour one 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the granulated sugar and 1/2 cup butter until light and fluffy.
- Beat in the eggs one at a time.
- In a small bowl, mix the milk, lemon juice, and lemon zest.
- Alternately add the flour mixture and the wet mixture to the sugar mixture, beginning and ending with the flour mixture. Mix until just combined. Do not overmix.
- Pour the batter into the prepared pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- To make the frosting, beat the powdered sugar and 1/2 cup butter until smooth.
- Add the milk/cream and vanilla extract. Beat until the frosting is light and spreadable.
- Fold in the shredded coconut.
- Once the cake is completely cool, spread the coconut frosting evenly over the top.
Notes
- For a stronger lemon flavor, you can add a few drops of lemon extract to the cake batter.
- Ensure the cake is fully cooled before frosting, or the frosting will melt.
