Description
A simple recipe for comforting chicken and rice flavored with turmeric.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1 cup long-grain white rice
- 2 cups chicken broth
- Salt to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
- Add onion to the pot and cook until softened, about 5 minutes.
- Stir in garlic, turmeric, cumin, and pepper. Cook for 1 minute until fragrant.
- Add rice and stir to coat with spices.
- Pour in chicken broth and bring to a boil.
- Return the chicken to the pot. Season with salt.
- Reduce heat to low, cover the pot, and simmer for 18-20 minutes, or until the rice is cooked and liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes before serving.
Notes
- For brighter color, add a pinch of saffron threads with the broth.
- Garnish with fresh chopped parsley before serving.
