Description
Make a quick and flavorful Spam fried rice that is ready in half an hour.
Ingredients

- 1 tablespoon vegetable oil
- 1 cup diced Spam
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots mix
- 3 cups cooked, cold white rice
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 2 large eggs, lightly beaten
- 2 green onions, sliced for garnish
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced Spam and cook until lightly browned, about 4 minutes. Remove the Spam and set aside.
- Add the chopped onion to the skillet and cook until softened, about 3 minutes.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Stir in the frozen peas and carrots mix and cook for 2 minutes.
- Add the cold rice to the skillet. Break up any clumps with your spoon. Cook for 3 minutes, stirring often.
- Push the rice to one side of the skillet. Pour the lightly beaten eggs into the empty space. Scramble the eggs until just set, then mix them into the rice.
- Return the cooked Spam to the skillet.
- Drizzle the soy sauce, oyster sauce, and sesame oil over the rice mixture. Toss everything together until well combined and heated through, about 2 minutes.
- Serve immediately, garnished with sliced green onions.
Notes
- Use day-old, cold rice for the best texture in your fried rice.
- Adjust the amount of soy sauce based on your preference for saltiness.
