Description

Make a quick and flavorful Spam fried rice that is ready in half an hour.

Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1 cup diced Spam
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots mix
  • 3 cups cooked, cold white rice
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 large eggs, lightly beaten
  • 2 green onions, sliced for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced Spam and cook until lightly browned, about 4 minutes. Remove the Spam and set aside.
  3. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  4. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Stir in the frozen peas and carrots mix and cook for 2 minutes.
  6. Add the cold rice to the skillet. Break up any clumps with your spoon. Cook for 3 minutes, stirring often.
  7. Push the rice to one side of the skillet. Pour the lightly beaten eggs into the empty space. Scramble the eggs until just set, then mix them into the rice.
  8. Return the cooked Spam to the skillet.
  9. Drizzle the soy sauce, oyster sauce, and sesame oil over the rice mixture. Toss everything together until well combined and heated through, about 2 minutes.
  10. Serve immediately, garnished with sliced green onions.

Notes

  • Use day-old, cold rice for the best texture in your fried rice.
  • Adjust the amount of soy sauce based on your preference for saltiness.
