Description

Make tender, flavorful peri peri chicken easily using your slow cooker.


Ingredients

  • 2 lbs chicken pieces (thighs or breasts)
  • 1 cup peri peri sauce (store-bought or homemade)
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced

Instructions

  1. Place the chicken pieces in the slow cooker.
  2. In a separate bowl, whisk together the peri peri sauce, lemon juice, olive oil, paprika, salt, pepper, and minced garlic.
  3. Pour the sauce mixture over the chicken, turning to coat evenly.
  4. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
  5. Shred the chicken with two forks if desired, or serve whole.

Notes

  • Serve the chicken over rice or with a side salad for a complete meal.
  • If the sauce is too thin at the end, remove the lid for the last 30 minutes of cooking to allow some liquid to evaporate.
