- 2 lbs chicken pieces (thighs or breasts)
- 1 cup peri peri sauce (store-bought or homemade)
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
Instructions
- Place the chicken pieces in the slow cooker.
- In a separate bowl, whisk together the peri peri sauce, lemon juice, olive oil, paprika, salt, pepper, and minced garlic.
- Pour the sauce mixture over the chicken, turning to coat evenly.
- Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is fully cooked and tender.
- Shred the chicken with two forks if desired, or serve whole.
Notes
- Serve the chicken over rice or with a side salad for a complete meal.
- If the sauce is too thin at the end, remove the lid for the last 30 minutes of cooking to allow some liquid to evaporate.
