A simple salad featuring thinly sliced raw Brussels sprouts.
Ingredients

- 4 cups Brussels sprouts, thinly shaved
- 1/2 cup toasted pecans, roughly chopped
- 1/4 cup dried cranberries
- 1/4 cup grated Parmesan cheese
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt to taste
- Black pepper to taste
Instructions
- Place the shaved Brussels sprouts in a large bowl.
- In a small bowl, whisk together the olive oil, lemon juice, and Dijon mustard.
- Pour the dressing over the Brussels sprouts. Toss to coat evenly.
- Add the toasted pecans, dried cranberries, and Parmesan cheese to the bowl.
- Toss gently until all ingredients are combined.
- Season with salt and pepper to your preference.
- Serve immediately.
Notes
- You can substitute walnuts for pecans if desired.
- For a tangier flavor, use apple cider vinegar instead of lemon juice in the dressing.
