- 1 pork tenderloin (about 1 to 1.5 lbs)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/4 cup chicken broth
- 1/4 cup heavy cream
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Pat the pork tenderloin dry with paper towels.
- In a small bowl, mix the salt, pepper, garlic powder, and thyme. Rub this mixture evenly over the entire surface of the pork.
- Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until nicely browned, about 2-3 minutes per side.
- Transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius) is reached.
- Remove the pork from the skillet and let it rest on a cutting board, loosely tented with foil, for 5 minutes.
- While the pork rests, place the skillet back on the stovetop over medium heat. Add the chicken broth and scrape up any browned bits from the bottom of the pan.
- Stir in the heavy cream and Dijon mustard. Cook, stirring constantly, until the sauce thickens slightly, about 2 minutes. Do not boil rapidly.
- Slice the rested pork tenderloin into medallions.
- Return the sliced pork to the skillet and spoon the sauce over the top. Garnish with fresh parsley before serving.
Notes
- For best results, use a meat thermometer to check the internal temperature of the pork.
- You can substitute vegetable broth for chicken broth if preferred.
