Description
A simple recipe for cooking chicken and vegetables together on one sheet pan with Greek flavors.

- 2 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1 large red onion, cut into wedges
- 2 bell peppers (any color), cut into 1-inch pieces
- 1 pint cherry tomatoes
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tablespoons dried oregano
- 1 tablespoon dried thyme
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup Kalamata olives (optional)
- 1/2 cup crumbled feta cheese (for serving)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, whisk together the olive oil, lemon juice, oregano, thyme, minced garlic, salt, and pepper to make the marinade.
- Add the chicken pieces, red onion wedges, and bell pepper pieces to the bowl. Toss everything well until the chicken and vegetables are evenly coated with the marinade.
- Spread the marinated chicken and vegetables in a single layer onto the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary.
- Roast for 20 minutes.
- Remove the pan from the oven. Add the cherry tomatoes and Kalamata olives (if using) to the sheet pan, gently tossing them with the other ingredients.
- Return the pan to the oven and roast for another 10 to 15 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven. Sprinkle the crumbled feta cheese over the chicken and vegetables before serving.
Notes
- For crispier vegetables, cut them into slightly larger pieces.
- You can substitute chicken breasts for thighs, but adjust the cooking time slightly as breasts may dry out faster.
- Serve this dish over rice, quinoa, or with pita bread.
