Description

A simple recipe for cooking chicken and vegetables together on one sheet pan with Greek flavors.


Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 large red onion, cut into wedges
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 1 pint cherry tomatoes
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons dried oregano
  • 1 tablespoon dried thyme
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Kalamata olives (optional)
  • 1/2 cup crumbled feta cheese (for serving)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, whisk together the olive oil, lemon juice, oregano, thyme, minced garlic, salt, and pepper to make the marinade.
  3. Add the chicken pieces, red onion wedges, and bell pepper pieces to the bowl. Toss everything well until the chicken and vegetables are evenly coated with the marinade.
  4. Spread the marinated chicken and vegetables in a single layer onto the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary.
  5. Roast for 20 minutes.
  6. Remove the pan from the oven. Add the cherry tomatoes and Kalamata olives (if using) to the sheet pan, gently tossing them with the other ingredients.
  7. Return the pan to the oven and roast for another 10 to 15 minutes, or until the chicken is cooked through and the vegetables are tender.
  8. Remove from the oven. Sprinkle the crumbled feta cheese over the chicken and vegetables before serving.

Notes

  • For crispier vegetables, cut them into slightly larger pieces.
  • You can substitute chicken breasts for thighs, but adjust the cooking time slightly as breasts may dry out faster.
  • Serve this dish over rice, quinoa, or with pita bread.
