Description

A simple recipe for making flavorful, crispy beet chips.


Ingredients

  • 2 medium beets
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Wash and trim the ends of the beets. You do not need to peel them.
  3. Slice the beets very thinly, about 1/16 inch thick, using a mandoline or a sharp knife.
  4. Place the beet slices in a bowl. Drizzle with olive oil and toss to coat evenly.
  5. Spread the beet slices in a single layer on the prepared baking sheets. Do not overlap them.
  6. Sprinkle with salt and pepper.
  7. Bake for 15 to 20 minutes, flipping the chips halfway through. Watch them closely after 15 minutes, as they burn quickly.
  8. Remove from the oven when the edges are slightly curled and the chips are crisp.
  9. Let the chips cool completely on the baking sheets; they will crisp up more as they cool.

Notes

  • For extra flavor, you can toss the beets with garlic powder or smoked paprika before baking.
  • If your oven has hot spots, rotate the baking sheets halfway through baking.
