A simple recipe for making flavorful, crispy beet chips.
Ingredients

- 2 medium beets
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Wash and trim the ends of the beets. You do not need to peel them.
- Slice the beets very thinly, about 1/16 inch thick, using a mandoline or a sharp knife.
- Place the beet slices in a bowl. Drizzle with olive oil and toss to coat evenly.
- Spread the beet slices in a single layer on the prepared baking sheets. Do not overlap them.
- Sprinkle with salt and pepper.
- Bake for 15 to 20 minutes, flipping the chips halfway through. Watch them closely after 15 minutes, as they burn quickly.
- Remove from the oven when the edges are slightly curled and the chips are crisp.
- Let the chips cool completely on the baking sheets; they will crisp up more as they cool.
Notes
- For extra flavor, you can toss the beets with garlic powder or smoked paprika before baking.
- If your oven has hot spots, rotate the baking sheets halfway through baking.
