Instructions

  1. Combine flour, sugar, baking powder, and salt in a large bowl.
  2. In a separate bowl, whisk together egg yolks, milk, melted butter, ube halaya, and vanilla extract until mixed.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. In a clean bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the batter until no white streaks remain.
  6. Preheat your waffle iron according to the manufacturer’s directions. Lightly grease if necessary.
