- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup Arborio rice
- 1/2 cup dry white wine (optional)
- 4 cups chicken or vegetable broth, warm
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large saucepan over medium heat. Add onion and cook until soft, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Add the rice and stir constantly for 2 minutes to toast the grains.
- If using wine, pour it in and stir until it is fully absorbed.
- Add one ladleful of warm broth to the rice, stirring until the liquid is almost completely absorbed before adding the next ladleful. Continue this process for about 20 minutes, or until the rice is creamy and cooked through.
- Stir in the heavy cream, Parmesan cheese, and butter. Mix until the cheese is melted and the rice is smooth.
- Season with salt and pepper to your preference. Serve immediately.
