A simple recipe for creamy orzo pasta with mushrooms and fresh basil.


Ingredients

  • 1 tablespoon olive oil
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add mushrooms and cook until browned, about 5-7 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in the orzo pasta and toast for 1 minute.
  5. Pour in the vegetable broth. Bring to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes, or until the orzo is tender and most liquid is absorbed.
  6. Stir in the heavy cream and Parmesan cheese. Cook until heated through and the sauce thickens slightly.
  7. Remove from heat. Stir in the fresh basil.
  8. Season with salt and pepper to your preference.

Notes

  • You can substitute chicken broth for vegetable broth if desired.
  • For a richer flavor, use fresh thyme along with the basil.
