A simple recipe for a flavorful roasted chicken suitable for holiday meals.


Ingredients

  • 1 whole chicken (about 5 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved
  • 4 cloves garlic, smashed

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Remove giblets from the chicken cavity. Pat the chicken skin dry with paper towels.
  3. In a small bowl, mix the olive oil, rosemary, thyme, salt, and pepper.
  4. Rub the oil mixture all over the outside of the chicken.
  5. Place the lemon halves and smashed garlic cloves inside the chicken cavity.
  6. Place the chicken in a roasting pan.
  7. Roast for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the thigh.
  8. Let the chicken rest for 10 minutes before carving.

Notes

  • Basting the chicken every 20 minutes with pan juices will keep the skin moist.
  • For crispier skin, increase the oven temperature to 425 degrees Fahrenheit for the last 15 minutes of cooking.
