Ingredients

- 2 cups cooked, shredded chicken
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 8 flour tortillas (medium size)
- 2 tablespoons butter or oil
- 1/4 cup salsa (optional, for serving)
- 2 tablespoons sour cream (optional, for serving)
Instructions
- Heat a large skillet over medium heat.
- Place one tortilla in the skillet.
- Sprinkle half of the cheese blend over the tortilla.
- Distribute half of the shredded chicken evenly over the cheese.
- Top with a second tortilla.
- Cook for 3 to 4 minutes per side, pressing gently with a spatula, until the cheese melts and the tortillas are golden brown.
- Remove from the skillet and slice into wedges.
- Repeat with the remaining ingredients.
- Serve immediately with salsa and sour cream, if desired.
Notes
- You can use pre-cooked rotisserie chicken to save time.
- For extra flavor, mix a teaspoon of taco seasoning into the shredded chicken before assembling.
- Use a lower heat setting if your tortillas brown too quickly before the cheese melts.
