Description
A simple recipe for creamy chicken marsala served over pasta for a comforting dinner.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 8 ounces cremini mushrooms, sliced
- 1/2 cup dry Marsala wine
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 12 ounces pasta (fettuccine or linguine recommended)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Reserve about 1/2 cup of the pasta water before draining.
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
- Add sliced mushrooms to the same skillet. Cook until softened, about 5 minutes.
- Sprinkle flour over the mushrooms and stir for 1 minute.
- Pour in Marsala wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half.
- Stir in chicken broth and thyme. Bring the mixture to a simmer.
- Reduce heat to medium-low. Stir in heavy cream. Simmer gently until the sauce thickens slightly.
- Return the cooked chicken to the skillet. Stir to coat.
- Add the drained pasta to the skillet. Toss everything together. If the sauce seems too thick, add a little reserved pasta water until you reach your desired consistency.
- Serve immediately, garnished with fresh parsley.
Notes
- You can substitute dry sherry for Marsala wine if needed.
- For a richer flavor, use chicken stock instead of broth.
- Ensure the chicken is fully cooked before removing it from the pan.
