- 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 2 large eggs, lightly beaten
- 1/2 cup buffalo wing sauce
- 1/4 cup unsalted butter, melted
- Vegetable oil for frying
Instructions
- Combine flour, salt, pepper, garlic powder, and cayenne pepper in a shallow dish.
- Dip each chicken piece first into the beaten eggs, then dredge thoroughly in the flour mixture. Shake off excess flour.
- Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
- Carefully fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.
- In a small bowl, whisk together the buffalo sauce and melted butter.
- Place the cooked chicken bites in a large bowl. Pour the sauce mixture over the chicken and toss gently to coat evenly.
- Serve immediately.
Notes
- For baking instead of frying, toss coated chicken with a light spray of oil and bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
- Serve with blue cheese or ranch dressing for dipping.
