  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 2 large eggs, lightly beaten
  • 1/2 cup buffalo wing sauce
  • 1/4 cup unsalted butter, melted
  • Vegetable oil for frying

Instructions

  1. Combine flour, salt, pepper, garlic powder, and cayenne pepper in a shallow dish.
  2. Dip each chicken piece first into the beaten eggs, then dredge thoroughly in the flour mixture. Shake off excess flour.
  3. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  4. Carefully fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.
  5. In a small bowl, whisk together the buffalo sauce and melted butter.
