Description
A light vanilla sponge cake filled with fresh berries and cream, rolled into a simple dessert.

- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- Pinch of salt
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 cup mixed fresh berries (strawberries, blueberries)
Instructions
- Preheat your oven to 375°F (190°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease it.
- In a large bowl, beat the eggs and granulated sugar with an electric mixer until pale and thick, about 5 minutes. Beat in the vanilla extract.
- In a separate small bowl, whisk together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined. Do not overmix.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 10 to 12 minutes, or until the top springs back lightly when touched.
- While the cake bakes, lay a clean kitchen towel on your counter and dust it lightly with powdered sugar.
- Immediately invert the hot cake onto the sugared towel. Peel off the parchment paper.
- Starting at one short end, carefully roll the cake and towel together. Place the roll seam-side down on a wire rack to cool completely.
- In a clean bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- Gently unroll the cooled cake. Spread the whipped cream evenly over the cake surface, leaving a small border around the edges. Scatter the mixed berries over the cream.
- Reroll the cake tightly without the towel. Wrap the finished roll in plastic wrap and chill for at least 1 hour before slicing and serving.
Notes
- For easier rolling, you can dust the parchment paper instead of the towel with powdered sugar.
- Use fresh, firm berries for the best texture inside the roll.
