A simple salad featuring fresh asparagus and salty feta cheese.
Ingredients

- 1 pound fresh asparagus, trimmed
- 4 cups mixed greens
- 4 ounces feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt to taste
- Black pepper to taste
Instructions
- Blanch the asparagus: Bring a pot of salted water to a boil. Add the trimmed asparagus and cook for 3-4 minutes until bright green and tender-crisp. Immediately transfer the asparagus to an ice bath to stop the cooking process. Drain well and cut into 1-inch pieces.
- Prepare the dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and minced garlic. Season with salt and pepper.
- Assemble the salad: In a large bowl, combine the mixed greens and the cooled asparagus pieces.
- Dress the salad: Pour the dressing over the greens and asparagus. Toss gently to coat.
- Serve: Sprinkle the crumbled feta cheese over the top before serving.
Notes
- You can roast the asparagus instead of blanching for a different flavor profile. Roast at 400 degrees Fahrenheit for 10-12 minutes.
- Add toasted pine nuts for extra crunch.
