Description

Ingredients

  • 4 cups mixed greens
  • 4 ounces feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Blanch the asparagus: Bring a pot of salted water to a boil. Add the trimmed asparagus and cook for 3-4 minutes until bright green and tender-crisp. Immediately transfer the asparagus to an ice bath to stop the cooking process. Drain well and cut into 1-inch pieces.
  2. Prepare the dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and minced garlic. Season with salt and pepper.
  3. Assemble the salad: In a large bowl, combine the mixed greens and the cooled asparagus pieces.
  4. Dress the salad: Pour the dressing over the greens and asparagus. Toss gently to coat.
  5. Serve: Sprinkle the crumbled feta cheese over the top before serving.

Notes

  • You can roast the asparagus instead of blanching for a different flavor profile. Roast at 400 degrees Fahrenheit for 10-12 minutes.
