A simple recipe for making chicken stew quickly using an Instant Pot.

- 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 bay leaf
- 1/2 cup all-purpose flour
- 1/2 cup cold water
- 1 cup frozen peas
- Salt and black pepper to taste
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil. When hot, add chicken pieces and brown them lightly on all sides. Remove chicken and set aside.
- Add onion, carrots, and celery to the pot. Sauté for 5 minutes until softened.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in chicken broth, thyme, rosemary, and bay leaf. Scrape the bottom of the pot to release any browned bits.
- Return the chicken to the pot. Secure the lid and set the valve to sealing.
- Cook on ‘Manual’ or ‘Pressure Cook’ on High pressure for 10 minutes.
- When cooking finishes, allow a natural pressure release for 10 minutes, then carefully quick release any remaining pressure.
- Remove the bay leaf. In a small bowl, whisk together the flour and cold water to make a slurry.
- Set the Instant Pot back to ‘Sauté’ mode (low). Stir the slurry into the stew. Cook, stirring constantly, until the stew thickens, about 3-5 minutes.
- Stir in frozen peas. Cook until the peas are heated through.
- Season with salt and pepper before serving.
Notes
- For a richer flavor, sear the chicken in batches to avoid overcrowding the pot.
- If you prefer thicker stew, use 3/4 cup of flour instead of 1/2 cup in the slurry.
