A simple recipe for a moist strawberry cake made from scratch.

  • 1 3/4 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1/2 cup strawberry puree for frosting
  • 2 cups powdered sugar for frosting
  • 1/2 cup unsalted butter for frosting
  • 1 teaspoon vanilla extract for frosting

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. Add the softened butter and mix until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk the eggs, buttermilk, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the 1 cup of strawberry puree.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  10. To make the frosting, beat the 1/2 cup butter until creamy. Gradually add the powdered sugar, alternating with the 1/2 cup strawberry puree and 1 teaspoon vanilla extract. Beat until smooth.
  11. Once the cakes are completely cool, frost and stack them.

Notes

  • Use fresh, ripe strawberries for the best flavor in the puree.
  • For a stronger strawberry flavor, you can add a few drops of strawberry extract to the batter.
  • Make sure the butter for the cake is truly softened, not melted.
