Description
A healthier version of Snickers bars made with dates for sweetness.
Ingredients

- 1 cup Medjool dates, pitted
- 1/2 cup peanut butter, natural
- 1/4 cup rolled oats
- 1/4 teaspoon sea salt
- 1/2 cup peanuts, roasted and salted
- 1/2 cup dark chocolate chips, sugar-free
- 1 tablespoon coconut oil
Instructions
- Line an 8×4 inch loaf pan with parchment paper, leaving an overhang.
- In a food processor, combine the pitted dates, peanut butter, rolled oats, and sea salt. Process until a sticky dough forms.
- Press the dough evenly into the bottom of the prepared loaf pan.
- In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
- Pour the melted chocolate mixture over the date base. Spread evenly.
- Sprinkle the roasted and salted peanuts over the chocolate layer. Gently press them in slightly.
- Place the pan in the freezer for at least 2 hours, or until firm.
- Remove the bars from the pan using the parchment overhang. Cut into 10 even bars.
Notes
- Store leftovers in an airtight container in the refrigerator for up to one week.
- You can substitute almond butter for peanut butter if you prefer.
