Description

A healthier version of Snickers bars made with dates for sweetness.


Ingredients

  • 1 cup Medjool dates, pitted
  • 1/2 cup peanut butter, natural
  • 1/4 cup rolled oats
  • 1/4 teaspoon sea salt
  • 1/2 cup peanuts, roasted and salted
  • 1/2 cup dark chocolate chips, sugar-free
  • 1 tablespoon coconut oil

Instructions

  1. Line an 8×4 inch loaf pan with parchment paper, leaving an overhang.
  2. In a food processor, combine the pitted dates, peanut butter, rolled oats, and sea salt. Process until a sticky dough forms.
  3. Press the dough evenly into the bottom of the prepared loaf pan.
  4. In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
  5. Pour the melted chocolate mixture over the date base. Spread evenly.
  6. Sprinkle the roasted and salted peanuts over the chocolate layer. Gently press them in slightly.
  7. Place the pan in the freezer for at least 2 hours, or until firm.
  8. Remove the bars from the pan using the parchment overhang. Cut into 10 even bars.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • You can substitute almond butter for peanut butter if you prefer.
