Description

  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
  • 4 sandwich buns
  • 4 lettuce leaves
  • 4 slices tomato
  • 1/2 cup mayonnaise
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh tarragon, chopped
  • 1 tablespoon lemon juice
  • 1 small garlic clove, minced

Instructions

  1. Cut chicken breasts in half horizontally to create four thin cutlets.
  2. In a shallow dish, mix flour, salt, pepper, and paprika.
  3. In a second dish, place the beaten eggs.
  4. In a third dish, place the panko breadcrumbs.
  5. Dredge each chicken cutlet first in the flour mixture, shaking off excess.
  6. Dip the floured cutlet into the egg, letting excess drip off.
  7. Coat the cutlet thoroughly in the panko breadcrumbs, pressing gently to adhere.
  8. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat to 350°F (175°C).
  9. Carefully place chicken cutlets in the hot oil, frying for 4-6 minutes per side until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  10. Remove chicken from oil and place on a wire rack or paper towel-lined plate to drain.
  11. While chicken cooks, prepare the dressing: Combine mayonnaise, parsley, chives, tarragon, lemon juice, and minced garlic in a small bowl. Mix well.
  12. Lightly toast the sandwich buns.
  13. Assemble the sandwiches: Spread the green goddess dressing on both halves of each bun.
  14. Place a lettuce leaf and a tomato slice on the bottom bun.
  15. Top with a crispy chicken cutlet.
  16. Place the top bun on the sandwich.

Notes

  • For extra crispiness, chill breaded chicken for 15 minutes before frying.
  • You can bake or air fry the chicken instead of deep frying for a lower fat option.
