A recipe for a crispy chicken sandwich topped with a fresh green goddess dressing.

- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Vegetable oil for frying
- 4 sandwich buns
- 4 lettuce leaves
- 4 slices tomato
- 1/2 cup mayonnaise
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
- 1 tablespoon fresh tarragon, chopped
- 1 tablespoon lemon juice
- 1 small garlic clove, minced
Instructions
- Cut chicken breasts in half horizontally to create four thin cutlets.
- In a shallow dish, mix flour, salt, pepper, and paprika.
- In a second dish, place the beaten eggs.
- In a third dish, place the panko breadcrumbs.
- Dredge each chicken cutlet first in the flour mixture, shaking off excess.
- Dip the floured cutlet into the egg, letting excess drip off.
- Coat the cutlet thoroughly in the panko breadcrumbs, pressing gently to adhere.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat to 350°F (175°C).
- Carefully place chicken cutlets in the hot oil, frying for 4-6 minutes per side until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
- Remove chicken from oil and place on a wire rack or paper towel-lined plate to drain.
- While chicken cooks, prepare the dressing: Combine mayonnaise, parsley, chives, tarragon, lemon juice, and minced garlic in a small bowl. Mix well.
- Lightly toast the sandwich buns.
- Assemble the sandwiches: Spread the green goddess dressing on both halves of each bun.
- Place a lettuce leaf and a tomato slice on the bottom bun.
- Top with a crispy chicken cutlet.
- Place the top bun on the sandwich.
Notes
- For extra crispiness, chill breaded chicken for 15 minutes before frying.
- You can bake or air fry the chicken instead of deep frying for a lower fat option.
