  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

  • 1/2 teaspoon dried mint
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for cooking

Instructions

  1. In a large bowl, combine the ground chicken, breadcrumbs, onion, egg, garlic, parsley, oregano, mint, salt, and pepper. Mix gently until just combined; do not overmix.
  2. Roll the mixture into small balls, about 1.5 inches in diameter. You should have about 18-20 meatballs.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Carefully place the meatballs in the hot skillet, ensuring not to overcrowd the pan. Cook in batches if necessary.
  5. Cook for 8-10 minutes, turning occasionally, until the meatballs are browned on all sides and cooked through (internal temperature reaches 165°F or 74°C).
  6. Remove the meatballs from the skillet and drain on paper towels.
