- 2 lbs parsnips
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Peel the parsnips and cut them into uniform pieces, about 1 inch thick.
- In a large bowl, combine the melted butter, minced garlic, salt, and pepper.
- Add the cut parsnips to the bowl and toss until they are evenly coated with the butter mixture.
- Spread the coated parsnips in a single layer on a baking sheet lined with parchment paper.
- Roast for 25 to 30 minutes, turning them halfway through, until they are tender and lightly browned.
- Remove from the oven, sprinkle with fresh parsley, and serve immediately.
Notes
- If your parsnips are very thick, cut them into smaller pieces to promote even cooking.
- You can substitute olive oil for half of the butter if you prefer a lighter flavor.
