Ingredients

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned on all sides, about 5 minutes. Remove chicken and set aside.
  4. Add onion and bell pepper to the same skillet. Cook until softened, about 5 minutes.
  5. Stir in garlic and cook for 1 minute until fragrant.
  6. Add diced tomatoes, chicken broth, Creole seasoning, thyme, and cayenne pepper (if using). Bring the mixture to a simmer.
  7. Return the browned chicken to the skillet.
  8. Reduce heat to medium-low, cover, and simmer for 10 minutes, or until the chicken is cooked through.
  9. Taste and adjust seasoning with salt and pepper if needed.
  10. Garnish with fresh parsley before serving.

Notes

  • You can substitute chicken thighs for breasts if you prefer.
