Description
A quick and flavorful Creole chicken dish ready in half an hour.

- 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1/2 cup chicken broth
- 1 teaspoon Creole seasoning
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Season the chicken pieces lightly with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned on all sides, about 5 minutes. Remove chicken and set aside.
- Add onion and bell pepper to the same skillet. Cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute until fragrant.
- Add diced tomatoes, chicken broth, Creole seasoning, thyme, and cayenne pepper (if using). Bring the mixture to a simmer.
- Return the browned chicken to the skillet.
- Reduce heat to medium-low, cover, and simmer for 10 minutes, or until the chicken is cooked through.
- Taste and adjust seasoning with salt and pepper if needed.
- Garnish with fresh parsley before serving.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- Adjust the amount of cayenne pepper based on your preferred spice level.
- Serve this dish over rice or with crusty bread.
