A simple recipe for bell peppers filled with a savory chili mixture.

- 4 large bell peppers
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (8 ounce) can tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup cooked rice (optional)
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking dish.
- Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers cut-side up in the prepared baking dish.
- Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
- Stir in the kidney beans, diced tomatoes, tomato sauce, chili powder, cumin, oregano, salt, and pepper. If using, add the cooked rice. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
- Spoon the chili mixture evenly into the hollowed-out bell peppers.
- Cover the baking dish with foil. Bake for 30 minutes.
- Remove the foil, sprinkle the tops of the peppers with cheddar cheese, and bake uncovered for another 10 to 15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Notes
- You can substitute ground turkey or ground chicken for the ground beef.
- For a spicier flavor, add a pinch of cayenne pepper to the chili mixture.
- If you prefer softer peppers, you can boil them for 5 minutes before stuffing.
