Easy Quinoa Cucumber Tomato Salad

Description

A simple and refreshing salad featuring quinoa, cucumber, and tomato with a light dressing.


Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 large cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Combine the rinsed quinoa and water or broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and let cool slightly.
  2. In a large bowl, combine the cooled quinoa, diced cucumber, halved tomatoes, chopped red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  4. Pour the dressing over the quinoa and vegetable mixture. Toss gently to coat all ingredients evenly.
  5. Serve immediately or chill for later.

Notes

  • For best flavor, let the salad rest in the refrigerator for at least 30 minutes before serving.
  • You can add 1/4 cup of crumbled feta cheese for extra flavor, if desired.
