- 6 cups vegetable broth
- 1 cup chopped carrots
- 1 cup chopped celery

- 1 cup chopped mushrooms
- 1/2 cup cooked lentils
- 1/2 cup chopped kale
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Combine vegetable broth, carrots, celery, onion, and mushrooms in a large pot.
- Bring the mixture to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 15 minutes, or until vegetables are tender.
- Stir in the cooked lentils, kale, thyme, salt, and pepper.
- Simmer for an additional 5 minutes until the kale wilts.
- Serve hot.
Notes
- You can substitute any root vegetables you have on hand.
- For extra flavor, add a bay leaf during the simmering stage and remove before serving.
