Easy Chicken Adobo

Description

A simple recipe for classic Filipino chicken adobo.


Ingredients

Scale
  • 2 lbs chicken pieces (thighs or drumsticks)
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1 head garlic, crushed
  • 1 teaspoon whole black peppercorns
  • 3 bay leaves
  • 1 tablespoon cooking oil
  • 1/2 cup water

Instructions

  1. Marinate the chicken in soy sauce, vinegar, crushed garlic, peppercorns, and bay leaves for at least 30 minutes, or preferably 2 hours in the refrigerator.
  2. Heat the cooking oil in a pot or deep skillet over medium heat.
  3. Remove the chicken from the marinade, reserving the liquid. Brown the chicken pieces on all sides.
  4. Pour the reserved marinade and the water into the pot.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30 to 40 minutes, or until the chicken is tender.
  6. Remove the lid and increase the heat to medium-high. Allow the sauce to reduce until it thickens slightly.
  7. Serve hot with steamed rice.

Notes

  • For a richer flavor, you can let the chicken braise uncovered for the last 10 minutes to allow the sauce to reduce more.
  • If you prefer less tang, add a teaspoon of sugar during the simmering stage.
