A simple recipe for making quinoa crispy with lemon and herbs.

- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1 teaspoon dried oregano
Instructions
- Rinse the quinoa thoroughly under cold water.
- Combine the rinsed quinoa and vegetable broth in a saucepan.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed.
- Remove the saucepan from the heat and let it stand, covered, for 5 minutes.
- Fluff the cooked quinoa with a fork.
- Heat the olive oil in a large non-stick skillet over medium-high heat.
- Add the cooked quinoa to the hot skillet in a single layer.
- Cook undisturbed for 5 to 7 minutes until the bottom layer becomes golden brown and crispy.
- Stir the quinoa gently, then cook for another 3 to 5 minutes until more parts are crispy.
- Remove from heat. Stir in the salt, pepper, lemon juice, parsley, and oregano.
- Serve immediately.
Notes
- For extra crispiness, do not stir the quinoa too often while it is in the skillet.
- You can substitute vegetable broth with chicken broth for a different flavor.
