Ingredients

  • 1 pound potato gnocchi
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook gnocchi according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Pour in diced tomatoes and vegetable broth. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Reduce heat to low. Stir in heavy cream and Parmesan cheese until the sauce is smooth.
  6. Add the cooked gnocchi to the skillet. Toss gently to coat.
  7. Stir in fresh basil. Season with salt and pepper.
  8. Serve immediately.

  • For a richer flavor, use chicken broth instead of vegetable broth.
  • If you prefer a thicker sauce, let it simmer uncovered for a few extra minutes before adding the cream.
