A simple recipe for creamy pasta using hummus as the base sauce.
Ingredients

- 12 oz pasta (penne or rotini recommended)
- 1 cup plain hummus
- 1/2 cup pasta water
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- Cook pasta according to package directions. Reserve about 1 cup of the starchy cooking water before draining.
- While the pasta cooks, prepare the sauce. In a medium bowl, whisk together the hummus, lemon juice, minced garlic, and olive oil.
- Gradually whisk in the reserved pasta water, about 1/4 cup at a time, until the sauce reaches a smooth, creamy consistency.
- Drain the pasta and return it to the pot.
- Pour the hummus sauce over the hot pasta. Toss well to coat everything evenly.
- Season with salt and pepper to your preference.
- Serve immediately, garnished with fresh parsley if desired.
Notes
- If the sauce thickens too much upon standing, add a splash more hot pasta water to loosen it.
- You can adjust the amount of lemon juice for a tangier sauce.
