Description

A simple recipe for creamy pasta using hummus as the base sauce.


Ingredients

  • 12 oz pasta (penne or rotini recommended)
  • 1 cup plain hummus
  • 1/2 cup pasta water
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of the starchy cooking water before draining.
  2. While the pasta cooks, prepare the sauce. In a medium bowl, whisk together the hummus, lemon juice, minced garlic, and olive oil.
  3. Gradually whisk in the reserved pasta water, about 1/4 cup at a time, until the sauce reaches a smooth, creamy consistency.
  4. Drain the pasta and return it to the pot.
  5. Pour the hummus sauce over the hot pasta. Toss well to coat everything evenly.
  6. Season with salt and pepper to your preference.
  7. Serve immediately, garnished with fresh parsley if desired.

Notes

  • If the sauce thickens too much upon standing, add a splash more hot pasta water to loosen it.
  • You can adjust the amount of lemon juice for a tangier sauce.
