Simple muffins with a cinnamon swirl topping.

- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/4 cup packed brown sugar (for swirl)
- 1 tablespoon ground cinnamon (for swirl)
- 2 tablespoons melted butter (for swirl)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, milk, and vanilla extract until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- In a small bowl, mix the brown sugar and cinnamon for the swirl.
- In a separate small bowl, mix the 2 tablespoons of melted butter with the cinnamon-sugar mixture.
- Fill each muffin cup about one-third full with batter. Sprinkle a small amount of the cinnamon-sugar mixture over the batter. Top with more batter until cups are two-thirds full. Sprinkle the remaining cinnamon-sugar mixture on top of the batter.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth. Drizzle the glaze over the cooled muffins.
Notes
- Do not overmix the batter; a few lumps are acceptable.
- You can add a small pinch of nutmeg to the dry ingredients for extra flavor.
- If the glaze is too thick, add milk one teaspoon at a time until you reach your desired consistency.
