Simple slice and bake cookies decorated with Christmas sprinkles.
Ingredients

- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup Christmas sprinkles
Instructions
- Beat the softened butter and sugar together until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the Christmas sprinkles.
- Shape the dough into a log, about 1.5 inches in diameter, using plastic wrap.
- Wrap the dough log tightly and chill in the refrigerator for at least 2 hours, or until firm.
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Line baking sheets with parchment paper.
- Remove the dough from the refrigerator and slice it into rounds about 1/4 inch thick.
- Place the cookie slices about 1 inch apart on the prepared baking sheets.
- Bake for 8 to 10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For easier slicing, let the chilled dough sit at room temperature for 5 minutes before cutting.
- You can freeze the dough log for up to 3 months; slice directly from frozen, adding 1-2 minutes to the baking time.
