- 1 cup unsalted butter, softened
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup powdered sugar
- 2–3 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and peanut butter until smooth.
- Add the granulated sugar and brown sugar to the butter and peanut butter mixture. Beat until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Roll the dough into 1-inch balls and place them on the prepared baking sheets, about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- To make the frosting, whisk together the powdered sugar and milk in a small bowl until smooth and creamy. Add more milk if needed to reach your desired consistency.
- Spread a thin layer of frosting on the bottom of one cookie and top with another cookie to form a sandwich. Repeat with the remaining cookies.
Notes
- For a richer chocolate flavor, use dark cocoa powder.
- You can add a pinch of espresso powder to the cookie dough to enhance the chocolate taste.
- Store the cookies in an airtight container at room temperature for up to 3 days.
