  • Diet: Vegetarian

Description

Simple, quick cookies made without an oven, combining chocolate and peanut butter flavors.

Ingredients

Scale
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking rolled oats

Instructions

  1. Combine sugar, milk, cocoa powder, and butter in a medium saucepan.
  2. Bring the mixture to a full rolling boil over medium heat, stirring constantly. Boil for exactly one minute without stirring after it starts boiling.
  3. Remove the saucepan from the heat. Stir in the peanut butter and vanilla extract until smooth.
  4. Quickly stir in the rolled oats until they are evenly coated.
  5. Drop rounded tablespoons of the mixture onto wax paper-lined baking sheets.
  6. Let the cookies cool and set completely at room temperature for about 30 minutes before serving.

Notes

  • Work quickly once the oat mixture is ready, as it sets fast.
  • If the mixture seems too thick to stir, briefly return it to low heat to soften slightly.
