A recipe for making basic, fluffy chocolate pancakes from scratch.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1 large egg
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Combine flour, cocoa powder, sugar, baking soda, baking powder, and salt in a large bowl. Whisk dry ingredients together.
- In a separate bowl, whisk together milk, egg, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are acceptable.
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Pour batter onto the hot griddle to form pancakes of your desired size.
- Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the second side until golden brown.
- Serve immediately.
Notes
- For richer flavor, substitute buttermilk for regular milk.
- Add chocolate chips to the batter before cooking if desired.
