Chocolate Meringue Pie

Description

A rich chocolate filling topped with a light, airy meringue.


Ingredients

  • 1 pre-made 9-inch pie crust
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups cold water
  • 3 large egg yolks, beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 4 large egg whites, room temperature
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons granulated sugar (for meringue)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a medium saucepan, whisk together 1 1/2 cups sugar, cocoa powder, cornstarch, and salt.
  3. Gradually whisk in the cold water until smooth.
  4. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil for 1 minute, stirring. Remove from heat.
  5. In a separate bowl, lightly beat the egg yolks. Slowly temper the yolks by whisking about 1 cup of the hot chocolate mixture into the yolks.
  6. Pour the tempered yolk mixture back into the saucepan with the remaining chocolate mixture. Cook over medium heat, stirring constantly, until the filling comes to a boil again. Remove from heat.
  7. Stir in the butter and vanilla extract until the butter melts.
  8. Pour the hot filling into the pre-baked pie crust.
  9. In a clean, grease-free bowl, beat the egg whites with the cream of tartar until soft peaks form. Gradually add the 6 tablespoons of sugar, beating until stiff, glossy peaks form.
  10. Spread the meringue over the hot filling, making sure the meringue touches the edges of the crust all around to prevent shrinking.
  11. Bake for 12 to 15 minutes, or until the meringue is lightly golden brown.
  12. Cool completely on a wire rack before slicing.

Notes

  • Make sure your bowl and whisk are completely free of grease when whipping egg whites for the meringue.
  • Use a hot filling when adding the meringue to help prevent the meringue from weeping.
