Description

Ingredients

  • 1 pre-made 9-inch pie crust, baked
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups milk
  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sugar

Instructions

  1. In a medium saucepan, whisk together the granulated sugar, cocoa powder, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil for 1 minute, stirring constantly. Remove from heat.
  4. In a small bowl, whisk the egg yolks. Slowly temper the yolks by whisking about 1/2 cup of the hot chocolate mixture into the yolks.
  5. Pour the tempered yolk mixture back into the saucepan with the remaining chocolate mixture. Cook over medium heat, stirring constantly, until the mixture returns to a boil. Boil for 1 minute. Remove from heat.
  6. Stir in the butter and vanilla extract until the butter melts completely.
  7. Pour the chocolate filling into the baked pie crust. Press plastic wrap directly onto the surface of the filling to prevent a skin from forming. Chill for at least 3 hours, or until firm.
  8. In a separate bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form.
  9. Spread or pipe the whipped cream over the chilled pie before serving.

Notes

  • You can substitute a graham cracker crust for the pre-made pastry crust.
  • Chill the pie completely before adding the whipped cream topping.
