Ingredients

  • 1 lb ground turkey
  • 1/4 cup finely chopped onion
  • 1 tablespoon chipotle pepper in adobo, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 hamburger buns
  • 4 slices pepper jack cheese
  • Chipotle mayonnaise, for serving
  • Lettuce leaves, for serving
  • Tomato slices, for serving

Instructions

  1. In a bowl, combine ground turkey, chopped onion, minced chipotle pepper, cumin, salt, and black pepper. Mix gently until just combined.
  2. Divide the turkey mixture into 8 equal portions.
  3. Heat a large skillet or griddle over medium-high heat.
  4. Place two portions of turkey mixture onto the hot surface. Immediately press down firmly with a sturdy spatula to flatten them into thin patties.
  5. Cook for 2-3 minutes until the edges are browned.
  6. Flip the patties. Place one slice of pepper jack cheese on each patty.
  7. Cook for another 1-2 minutes until the cheese melts and the turkey is cooked through.
  8. Remove the patties from the skillet. Repeat with the remaining turkey portions.
  9. Lightly toast the hamburger buns, if desired.
  10. Assemble the burgers: spread chipotle mayonnaise on the buns, then layer with lettuce, a cheese-topped turkey patty, and tomato slices.

Notes

  • For extra spice, add a dash of hot sauce to the turkey mixture.
  • You can substitute Monterey Jack cheese for pepper jack if you prefer less heat.
