Description

A recipe for making flavorful grilled chicken skewers served with peanut sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/4 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 cup creamy peanut butter
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 1 tablespoon water
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the chicken cubes with coconut milk, soy sauce, turmeric, coriander, cumin, and salt. Mix well to coat. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Prepare the peanut sauce: In a small saucepan over medium heat, combine peanut butter, brown sugar, lime juice, and water. Stir until smooth and heated through. Remove from heat.
  3. Thread the marinated chicken pieces onto the soaked wooden skewers.
  4. Preheat your grill or grill pan to medium-high heat. Lightly oil the grates.
  5. Grill the skewers for 3 to 4 minutes per side, turning occasionally, until the chicken is cooked through and lightly charred.
  6. Serve the cooked chicken skewers immediately with the peanut sauce for dipping.

Notes

  • If you do not have wooden skewers, you can use metal ones, but do not soak them.
  • For a spicier sauce, add a pinch of cayenne pepper to the peanut sauce mixture.
  • You can bake the skewers at 400 degrees Fahrenheit for 15-20 minutes if you prefer not to grill.
