Simple Cherry Cheesecake

Description

A straightforward recipe for a classic baked cherry cheesecake with a graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 (21 ounce) can cherry pie filling

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Wrap the outside bottom of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Mix graham cracker crumbs and 1/4 cup sugar. Add melted butter and press the mixture firmly into the bottom of the prepared springform pan.
  3. Bake the crust for 10 minutes. Remove from oven and let cool slightly.
  4. Beat the softened cream cheese in a large bowl until smooth. Gradually beat in 1 1/2 cups sugar and vanilla extract until combined.
  5. Beat in the eggs one at a time, mixing just until blended after each addition. Do not overmix.
  6. Pour the cream cheese mixture over the cooled crust.
  7. Bake for 50 to 60 minutes, or until the edges are set but the center still jiggles slightly.
  8. Turn off the oven, prop the door open slightly, and let the cheesecake cool in the oven for 1 hour.
  9. Remove the cheesecake from the oven and cool completely on a wire rack.
  10. Chill the cheesecake in the refrigerator for at least 4 hours, or preferably overnight.
  11. Before serving, spread the cherry pie filling evenly over the top of the chilled cheesecake.

Notes

  • For a water bath, place the foil-wrapped springform pan inside a larger roasting pan and fill the larger pan with hot water halfway up the sides of the springform pan before baking.
  • Softened cream cheese mixes best; leave it out at room temperature for about an hour before starting.
