Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • 1/2 cup ice water, plus more if needed
  • 6 cups fresh or frozen blueberries
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Prepare the crust: Mix flour and salt in a large bowl. Cut in the cold butter until the mixture resembles coarse crumbs with some pea-sized pieces remaining. Gradually add ice water, mixing until the dough just comes together. Divide the dough in half, form into discs, wrap, and chill for at least 1 hour.
  2. Prepare the filling: In a separate bowl, gently combine blueberries, sugar, cornstarch, and lemon juice.
  3. Assemble the pie: Preheat your oven to 425 degrees F (220 degrees C). Roll out one dough disc and place it in a 9-inch pie plate. Pour the blueberry filling into the crust.
  4. Roll out the second dough disc for the top crust. Place it over the filling. Trim and crimp the edges to seal. Cut several slits in the top crust to allow steam to escape.
  5. Brush the top crust with the beaten egg wash.
  6. Bake for 15 minutes at 425 degrees F (220 degrees C). Reduce the oven temperature to 375 degrees F (190 degrees C) and continue baking for 40 to 50 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Cool completely on a wire rack before slicing.

Notes

  • If using frozen blueberries, do not thaw them before mixing with the other filling ingredients.
  • If the crust edges brown too quickly during baking, cover them loosely with aluminum foil.
